If your route doesn't take you to or through any of Scotland's traditional centres of culinary excellence yet you seek a first-rate feed - from Scottish chefs with 'starry' pasts - set a course for the 1610 Restaurant in one of Scotland's oldest drinking haunts: the flagstone-floored Globe Inn.

Several steps up from The Services (whole laddersful, in fact) it's the place to come to indulge in a spot of Scottish finer dining before continuing on, fully restored. Each creative dish looks and tastes delicious, thanks to an excellent sourcing policy focusing on quality and food provenance. Every supplier is known and named, every grower of fresh, flavour-packed local produce tried and trusted. The Galloway beef is from Nether Dargavel Farm and the trademark haggis from JB Houston's, Dumfries.

Robert Burns famously lived, loved and entertained here. If you are a fan, warm up with a single malt from the bar's 300-strong whisky collection before visiting the small, on-site Burns museum.
