Follow the winding paths through the leafy plant centre to find the impressive yurt that houses Nicholsons’ restaurant, keeping your eyes peeled for wildlife (we spotted the green flash of a woodpecker). The enormous Mongolian yurt is a blissful sanctuary from the road: in winter it twinkles with fairy lights, warmed by the wood burner; come summer the canvas roof glows above tables decorated with large boughs of greenery. Staff are friendly and knowledgeable, and service is with a smile. This is the perfect solution for the British climate – a dining experience with a fresh, outdoorsy feel yet which offers stylish shelter from the weather.
The food has an ethically driven vegetarian and vegan focus, with some carefully sourced meat and fish options, and is reliably delicious. Try filled croissants with fresh fruit, or smoked haddock kedgeree for brunch; cumin-roasted beetroot with babaganoush or Keralan vegetable curry for lunch. The chocolate parfait pudding is mindblowing.
